Ask the experts: raw eggs

Are eating raw eggs all they’re cracked up to be? Nutritionist Emma Barraclough answers your questions…

Q. In the Rocky films he ate his eggs raw with milk. Is there any benefit to eating eggs this way? Bill Hopkins, by email

A. Unfortunately not such a dramatic benefit as it was for Rocky! Cooking will change the structure of the proteins in the eggs but the actual protein amount will not change – it will still be around 6g per egg. Some of the proteins are actually more readily absorbed when they are cooked, and the risk of contracting salmonella is of course much less!
