Rustle up your own energy bars!
The bars are a quick, easy and convenient snack to eat on the go and full of slow releasing carbs for sustained energy, protein for muscle growth and immune boosting nutrients.
Makes 6-8 bars
- 2 tbsp. honey
- 4 tbsp. coconut oil
- 3 tbsp. peanut butter
- 280g porridge oats
- 3 tbsp. ground flaxseeds
- 1 tbsp. pumpkin seeds
- 1 tbsp. goji berries
- 2 tbsp. chopped dates
- 1 tbsp. chopped dried figs
Melt the honey, coconut oil and peanut butter together.
Add the rest of the ingredients, mix well and add into a baking tin and compress.
Bake at 180 degrees C for 10-15 minutes. allow to cool then cut into bars.
